Lemon Bars are not the same as Lemon Slice
I learned that the hard way, after I made the lemon bars from the Joy of Vegan Baking. I thought that bars were just the American version of our slice and so they would be the same thing. Unfortunately American Lemon bars don't appear to contain condensed milk and so aren't creamy.
One day, i'll learn how to make a vegan equivalent of Lemon slice. It's the only thing I haven't figured out how to veganize, but I'm sure with a vegan version of condensed milk it will work. I just wish someone would do the hard work of trial and error for me. If you know of a recipe please point me in the right direction.
No idea what a lemon slice is but... the TJoVB lemon bar recipe is just outstanding!
ReplyDeleteIf you're trying to make it more creamy -- what about creating a heavy cashew cream with raw cashews and the lemon juice and folding that into the lemon bar filling before baking it?
I have a recipe for vegan condensed milk at home. I'll see if I can dig it up, and then email it to you. Is the email on your blogger account still active?
ReplyDeleteyeah, it can be done...i made a great vegan lemon slice once...based on a regular recipe but w/ vegan condensed milk...i can't seem to find my recipe either. i'm sure you could find one online...but make sure you either halve the recipe or have plans for other things to make with cos i think the recipes make a LOT of condensed milk.

ReplyDelete2/3 cup white sugar
three tablespoons nondairy butter
1/3 (maybe a bit more?) cup boiling water
mix sugar and milk powder in a bowl. melt margarin into water.
fold dry into wet ingredients. beat with an electric mixer for two minutes.
refrigerate.
makes for about a can on sweetened condensed milk. make it the night before you need it, though it keeps for a week.
