Choc Chip Cookies with Peanut Butter Ice Cream


I told you, it wouldn't be long til I tried making the gluten free chocolate chip cookies that I blogged about a few weeks ago. In fact it was only a week later but I thought it would be kind of boring to hear that I made the same cookies in one week. I do think it's worth sharing though because I made some changes, this time I used regular white agave and a mixture of white and dark chocolate. But I discovered that the strong after taste wasn't the dark agave but was the 1 tablespoon of vanilla extract, next time I will try with only 1 teaspoon to see how it compares. I do love the texture though and general flavour. I took some to a friend's house and then used the remaining leftovers to make peanut butter ice cream sandwiches using the recipe from vegan scoop. It is seriously my most used cookbook and this ice cream was another winner.

  1. Oh yum, peanut butter ice cream between choc chip cookies. That sounds incredible. Andy's currently making some chai-spiced ice cream, but when we eat this I think PB will have to be next!

  2. Ah, I'm glad to hear that about the agave because I was starting to seriously doubt my own tasting abilities! I only use dark agave and have never noticed an overly strong taste. Plus, there is no such thing as too many peanut butter cookie posts :)

  3. timely warning for me - I just bought extract instead of essence and was wondering if I need to tone down how much vanilla I use - glad it was so easy to fix the recipe

  6. I am scared to get Vegan Scoop because I think I will start to make ice cream every day! But I do enjoy eating it vicariously through you...

    Great to hear your thoughts on a vegan, GF chocolate chip cookie recipe. I'm not a big cookie eater, but it's important to have a great CC cookie in your arsenal, I feel. And of course once you put ice cream in the middle... I become a cookie eater!

  7. I can't believe how behind I am on peoples blogs! Those cookies look really delicious & the peanut butter ice cream / cookie combo is genius. I have a copy of vegan scoop but I haven't made anything from it yet, I'm planning on getting a ice cream maker this summer so hopefully I can start using it soon.
